Un zambet


Ieri s-a incheiat a treia editie a Festivalului de muzica populara Elena Roizen. Printre invitati s-a numarat si mama. A fost un eveniment frumos, inchinat celei mai mari artiste a Dobrogei, Elena Roizen. Imi pare rau sa scriu dupa ce s-a intamplat numai ca asa fost sa fie. Mi-a placut sa fiu acolo si m-am bucurat s-o vad pe mama cantand, iar. 🙂
Nu am filmare, revin daca gasesc ceva pe youtube dar am facut cateva poze asa ca daca vrei sa vezi un costum traditional aroman si pe mama, priveste.

Is There Ever Enough Chocolate?


Are you a chocolate addicted? Then you will love this. Petit pot au chocolat. I remember that this recipe was among the few that I had tried at home, in Romania. I had found it in “The Sunday Times” at the end of my staying in London and I had decided to make it at home. It was worth waiting that long. And last Wednesday I thought of making it again. For Thursday. Why? Because Thursday was my birthday. Wow, I made a rhyme!

When I think of birthdays, I always think of doing something special, as long as is not that traditional. Don’t get me wrong, I am quite old-fashion in some ways but not in other ways. So, these delicious pots seem just perfect to indulge on somebody’s birthdays. You have a perfect smooth chocolate cream and you will ask for more until you die. Of pleasure, of course. I am sorry to ruin your daydreaming but let’s get to work.

Petit Pot au Chocolat

Serves 8

Ingredients:

  • 350 ml double cream
  • 1 vanilla pod, split lengthways or 2 tbsp of vanilla sugar
  • 250 g plain chocolate, broken into pieces (remember, remember: at leat 70 % cocoa)
  • 150 ml milk (full fat please, please, if you make it for your birthday, spoil yourself)
  • 4 small egg yolks
  • 2 heaped tbsp icing sugar (or simply sugar, if you don’t have icing sugar)

Method:

  • This is my favourite part. 😉
  • Preheat the oven to 140 °C, 275 °F, Gas Mark 1.
  • In a saucepan, warm the cream with a vanilla pod, whisk to disperse the vanilla seeds, the cover and leave to infuse for 30 minutes. With vanilla sugar just make sure it melts in the cream and leave to cool.
  • In another pan, melt the chocolate in the milk. (I know you will taste a bit. )
  • In a bowl, beat together the egg yolks and sugar, add the chocolate milk and vanilla cream, then blend thoroughly. (I bet that you will taste again, and I win. What I win? I won’t wash the dishes.) Pass through a fine sieve and pour into a little pots or ramekins. (I adore ramekins, there are never enough for me, that is why I have decided to buy some more the moment I am in London.)
  • Bake in a bain-marie in the oven for 45 minutes to 1 hour, or until slightly puffed-up and spongy. Don’t worry about the crust forming top. It may look as it is overcooked but it is not. Plus, this crust when cold, covers an intense chocolate cream. Cool in the fridge for at least 6 hours before serving.

La multi ani mie! 😉

E ziua mea azi si imi ofer ceva special. Un desert frantuzesc cu ciocolata. Muuuulta ciocolata. Cremos si delicat, amarui, aromat, delicios, etc, etc. Pentru ca merit.

Partea draguta e ca se consuma rece si pentru perioada asta calda e nemaipomenit. Crede-ma ca e ceva foarte bun. Se gateste usor, repede iar rezultatul e ca vei servi nu o portie ci mai multe. Iata ce faceam eu ieri seara, dupa ce m-am spalat pe cap, ca sa aiba timp sa stea in frigider sa se aseze si azi sa ma rasfat. Si nu este traditionalul tort pentru ca am zis ca vreau ceva deosebit, este o crema de ciocolata facuta in boluri mici de portelan. Ca nu, azi nu mai fac nimic altceva. Decat sa imi imbratisez si sa petrec timpul cu floarea mea, poate sa scriu blogul si bine-nteles temele pentru examene. De nu le-as avea. In fine, asta e acum si conteaza pentru mine sa marchez cumva, frumos, ziua mea. Chiar daca am treaba, totusi nu o neglijez. Reteta aleasa este din “The Sunday Times” some long time ago. Dar mi-a placut cum suna titlul, delicat ca un portelan si rafinat.

Petit Pot au Chocolat

Serveste 8

Ingrediente:

  • 350 ml smantana
  • 1 baton vanilie  taiat pe lungime sau un plic zahar vanilat
  • 250 g ciocolata amara (cel putin 70% cacao)
  • 150 ml lapte
  • 4 galbenusuri
  • 2 linguri zahar

Preparare:

  • Incalzeste cuptorul la 140°C/ 275 °F/ punct 1 la cel cu gaz. Intr-un vas incalzeste impreuna smantana si batonul de vanilie, amesteca bine sa se disperseze semintele, acopera si lasa sa se infuzeze cca 30 de minute.
  • Intre timp, in alt vas, topeste ciocolata in lapte.
  • Intr-un bol, bate galbenusurile cu zaharul, bine de tot, adauga apoi ciocolata topita si smantana cu vanilie (din care scoti totusi batonul) si amesteca bine. Srecoara minunatia printr-o sita si apoi imparte-o in mici boluri ramekin (sunt boluri de portelan, ceramica sau sticla, de diferite marimi care se folosesc la acele mancaruri care se preteaza a fi servite in portii individuale).
  • Bolurile pune-le intr-o tava mare (eu am folosit tavile acelea mari si rotunde de la cuptorul electric rusesc, daca mai stie cineva de el si daca mai foloseste) in care adauga apa care sa vina cam pana la jumatatea bolurilor, nu mai mult de 2/3 totusi. Asta inseamna ca vei gati bain-marie. Lasa totul la foc mic cca 45 de min-1 ora.
  • Lasa-le sa se raceasca apoi si pune-le la frigider sa stea cel putin 6 ore inainte sa servesti.

In the Orthodox countries like mine, we celebrate Saints Constantin and his mother Elena on the 21st of May, so the persons named like that are phoned/or told “Happy name’s day!”. As I am Elena, I was told “Happy name’s day!” a lot yesterday, in fact, most of the day I spent it in the phone answering and talking. It is a traditional custom to do that, or to visit friends or relatives to wish them the same. I had visitors, of course, a couple of friends and I had a nice day. A big surprise expected me when all my colleagues from a previous job wished me in chorus on the phone “Happy name’s day!”. I could hear them crying. That was so nice of them and totally unexpected.

Because of this beautiful name I thought of a recipe that it bears it and I came with a very special one that I made in London for the first time, years ago.  I made it at home again, just once, for another special occasion and my mom had the chance to eat something fine, elegant, exquisite and delicious. And not just her.

I have found the recipe in “Good Housekeeping – All Colour Party Cookbook”, 1992 at the “Stunning Desserts” chapter. Stunning it is. But at home I was not entirely satisfied with what I had so I searched on the Internet and found another recipe and now I am presenting a  mix from both. In my humble opinion this is one of the best recipe I have eaten and the feeling can’t be described. When I talk about food, about the recipe I have tried I feel them again, with all that it comes along. A good food gives you something special, a happiness and a smile on your face. If I may say so, it is as satisfying as making love.

Poires Belle Helene

Ingredients:

  • 4 cooking pears (preferably Conference)
  • 50 g (2 oz) sugar
  • 900 ml (1 1/2 pints) water
  • lemon rind and lemon juice from a whole lemon
  • 150 g dark chocolate, broken into pieces (high quality and at least 70 % cocoa)
  • 3 tbsp orange-flavoured liqueur or Poire William liqueur
  • 1 or 2 scoops vanilla bean ice cream per person (optional)
  • a few almond cookies (thin and crisp, no matter what shape you choose, or more authentic “tuiles aux amandes”)
  • 200 ml double cream
  • vanilla sugar

Method:

  • Put the sugar, water, lemon rind and lemon juice in a deep pot and heat gently, without stirring, until the sugar has dissolved.
  • Peel the pears quickly (to prevent discoloration), leaving the stalks on. Cut out the cores from the bottom and level them so that the pears will stand upright.
  • Submerge the pears if possible in the pot and simmer with the lid on for 20 minutes on medium heat or until tender. Drain the pear, cover and keep the juice. Let them both cool down.
  • Make the chocolate sauce. Bring the pear juice to a boil in a small pot and allow it to evaporate until half of the volume is left. Discard the lemon rind from the syrup. Place the small pot in a bigger one, half full of water (“Bain Marie”) and place over medium heat without allowing the water to boil. Cut the chocolate into small pieces and melt it in the warm pear syrup, stirring until smooth and shiny. Add Poire William or orange-flavoured liqueur for a special twist. And yes, you can dip a finger to taste. ONCE. 😉
  • In another bowl, whip double cream with vanilla sugar to make crème Chantilly.
  • To assemble, place one pear in each dish, upright. Add 1 or 2 scoops of vanilla ice cream. Pour the chocolate sauce on the pear and ice cream. Add crème Chantilly. Stick 1 or 2 almonds thins in the ice cream.
  • Serve immediately. I know you can’t wait to taste. But wait: there is somebody missing. Yes, your loved ones.

Multumesc, multumesc. 😉 La multi ani tuturor sfintilor Constantini si Elene azi! 🙂 Lor si mie inclusiv le dedic azi o reteta speciala si minunata, ceva la care ma gandeam de mult sa public, dar imi propusesem s-o fac azi, pentru ca o zi speciala merita o reteta speciala. Reteta asta e divina. E una din acele prajituri care te fac sa mori si sa invii de placere si daca imi permiti sa vorbesc altfel, de fapt azi imi dau singura voie, 😉 , ei bine, iti ofera o placere aproape orgasmica. Simti niste valuri in stomac si te topesti de placere cand papilele tale gustative se intalnesc cu crema de ciocolata calda, frisca si daca doresti, si cu inghetata de vanilie rece. Combinatia de temperatura nu se poate descrie in cuvinte. Te asigur ca merita sa gusti asa ceva macar o data in viata. Eu am realizat aceasta reteta prima data, evident in Londra, ca acolo am dat de ea, si apoi o singura data acasa. Au fost doua momente speciale, numai si pentru faptul ca m-am rasfatat cu asa ceva. Chiar nu am cuvinte sa descriu senzatiile dar le simt si acum numai scriind asta. Mi-as fi dorit sa imi ofer azi perele frumoasei Elena, ca de, doar reteta poarta numele meu, numai ca am optat pana la urma pentru un Tiramisu. Da, stiu… dezamagire! Dar nu am avut dispozitia. Si pana la urma Tiramisu pe care care il fac eu, si care e si aici pe blog, nu e  o prajitura oarecare asa ca m-am mangaiat cu acest gand. Plus ca l-am facut azi dimineata. Of, de ziua mea nu vreau sa fac nimic dar am scapat macar de spalat vasele. Stii ca eu murdaresc mai mult decat e necesar. Si Tiramisu a iesit ca de obicei, perfect. Plus piure cu unt, sare si piper, frecat bine, plus piept de pui taiat in felii mai subtiri, cu sare, piper, oregano, prajit in unt si vin alb. Ti-e foame?

But let’s talk about this exquisite dessert. Ca un facut, reteta am gasit-o in cartea “Good Housekeeping – All Colour Party Cook Book”, 1992 la sectiunea “Stunning desserts”. E si normal, la cat de extraordinar este. Numai ca acasa fiind, pentru a doua mea experienta cu aceste delicatesuri, mi-am dat seama ca nu ma satisface pe de-a-ntregul reteta pe care o am asa ca am mai cautat putin pe net si pana la urma, am luat putin de aici,  putin de acolo si am facut ceva sa imi placa si mai mult. Doamne, cum e sa vrei sa impresionezi pe cineva, cata munca! Dar mi-a iesit mai mult decat imi propusesem, toata lumea s-a declarat extaziata. Numai si asta, si face mai mult decat mi-as dori. Iar am scris o groaza pana la reteta, multumesc ca ai rabdare sa citesti atata vorbarie si ca nu te plictisesti. Profit si eu din cand in cand. 😉 Sa trec la partea a doua pentru un desert fin, elegant, delicios, etc. Astept si alte superlative de la tine  (pentru ca nu accept decat superlative la aceasta reteta), dupa ce o prepari si o mananci.

(sau mai pe romaneste dar nu mai zambi ca ma enervezi acum : Perele frumoasei Elena)

Ingrediente:

  • 4 pere  (pentru o masa mare, pentru ceva intim doar 2, si injumatateste si celelalte ingrediente apoi – cauta pere Conference sau oricum ceva mai tari ca sa se inmoaie frumos)
  • 50 g zahar
  • 900 ml apa
  • suc de lamaie de la o lamaie
  • coaja de la lamaie rasa
  • 150 g ciocolata neagra (macar 70 % cacao, altfel nu mai vorbesc cu tine )
  • 3 linguri lichior de portocale (gaseste unul bun) sau 3 linguri lichior Poire William
  • inghetata de vanilie (optional dar absolut necesar pentru cald-rece)
  • biscuiti cu migdale, crocanti si subtiri sau pentru ceva autentic, tuiles aux amandes (sper sa gasesti una din variante)
  • 200 ml smantana (no fat-free, please)
  • zahar vanilat

Preparare:

  • Pune apa, zaharul si sucul si coaja de lamaie intr-un vas mai adanc la foc mic fara sa amesteci pana se topeste zaharul.
  • Cojeste perele rapid, ca sa nu aiba timp sa se coloreze, scoate-le mijlocul dar lasa coditele ca decor si ca sa te ajute mai tarziu sa le poti scoate mai usor din vas.
  • Pune perele in vasul cu sirop, in picioare sau pe o parte (cel mai bine e sa fie acoperite in intregime in sirop) si lasa-le la foc mic  20 de minute sau pana s-au inmuiat. Scoate-le din sirop si lasa-le sa se raceasca intr-un vas acoperit.
  • Prepara acum sosul de ciocolata (mmmmmmmmmmmmmm). Dupa ce s-a racit siropul, fierbe-l pana se evapora cam jumatate din el. Strecoara-l intr-un vas mai mic si introdu acest vas in alt vas mai mare, umplut jumatate cu apa (Bain Marie”) si lasa-l la foc mediu (apa nu trebuie sa fiarba). Rupe ciocolata, pune-o in sirop la topit si amesteca pana se omogenizeaza bine. For a twist, adauga ori lichior de portocole sau lichior Poire William. Ok, ai voie sa introduci un deget sa gusti. Unul, te rog, nu toate.
  • Intr-un alt vas, bate smantana cu zaharul vanilat ca sa obtii crème Chantilly.
  • Acum treci la partea de imbinare a elementelor. Alege farfurii de ciorba sau boluri (e nevoie sa fie adanci ca sa stea lichidele adunate) si introdu perele, in picioare.
  • Daca doresti, caci este optional, pune cate doua linguri de inghetata intai. Toarna peste ele si peste pere sosul de ciocolata cald, apoi frisca vanilata sau crème Chantilly (cum doresti sa ii spui) si cate doi biscuiti cu migdale.
  • Serveste imediat. Nici nu ma astept sa stai sa contemplezi asa ceva. Eventual sa te urmareasca in somn.

Pofta mai mult decat buna, delicioasa!

Braised pork in orange sauce


For me, this recipe was a surprise the first time I saw it. I haven’t thought before of proper food with fruits. In my mind, fruits go with desserts, not other dishes. When I tasted this meal, I liked it. And I think you would agree if you are open to try. Plus, you can cook it ahead so if you want to eat it next day, all you have to do is to put the casserole in the preheated oven and this is it. Simple and easy. I have to say that I have found this recipe in Ann Ager’s book “Cooking in a hurry” edited in 1980 and I cooked it some years ago when I was in London. I would like to cook it again, someday. 🙂

Braised pork in orange sauce

Advanced preparation and cooking time: 45 min.

Preparation and cooking time on the day: 40 min.

Ingredients:

  • 2 medium onions, peeled and chopped
  • 3 tbsp oil
  • 500 g (1 1/4 lb) pork fillet, cubed seasoned flour
  • 300 ml (1/2 pint) pure orange juice
  • 150 ml (1/4 pint) chicken stock (or water if you don’t have stock)
  • 225 g (8 oz) carrots, peeled and grated
  • pinch of ground cinnamon
  • salt
  • freshly ground black pepper
  • 2 oranges, peel and pith removed, cut into segments
  • 150 ml (1/4 pint) double cream
  • 2 tbsp chopped walnuts

Method:

  • Fry the chopped onion in the oil for 3 minutes over low heat. Dust the cubed pork in seasoned flour and add to the onion. Cook over moderate heat until the meat is lightly browned on all sides.
  • Gradually stir in the orange juice and chicken stock. Bring to the boil and add carrot, cinnamon, salt and pepper. Cover and simmer gently for 30 minutes.
  • Stir in the orange segments, double cream and walnuts and allow to cool.
  • Transfer to a casserole, cover and chill in the refrigerator overnight.
  • On the day: cook in a covered casserole in a preheated oven at 180°C, 350°F, Gas Mark 4,  for 40 minutes. In case you eat this immediately, skip the  “chill overnight” step. And enjoy the flavours!

Am facut o pauza cam mare de la ultima mea postare de reteta dar am o scuza (care acuza, evident! ;)). Am inceput sesiunea si nu am starea necesara sa scriu zilnic dar cand o fac, constat ca regret ca nu am facut-o mai devreme, pentru ca imi face bine. Ultima reteta era de porc si am zis sa ma tin pe firul asta, daca tot am umblat la dosarul cu retete de carne de porc. Si am gasit o reteta delicioasa si interesanta in acelasi timp, un mix la care putini se gandesc. Porc cu portocale. Da, exact ce ai citit. Porc cu portocale. Ca de obicei, si reteta asta are o poveste in spate. Intr-o zi oarecare de acum cativa ani, la Londra, am dat peste ea intr-o carte scrisa de Anne Ager “Cooking in a Hurry”, aparuta in 1980. Numai titlul cartii si mi-a placut din start. Pentru ca de mult ori ma grabesc si mai ales nu imi place sa stau ore intregi in bucatarie. Cu cat e mai usor si mai repede, cu atat mai bine. Asa zic eu, dar cand gasesc o reteta complicata ador s-o migalesc. Deci, dupa titlul, am zis: iata o carte inteleapta si care trebuie folosita, macar o data. Rasfoind-o, aceasta reteta mi-a atras atentia, prin neobisnuitul ei. Iti dai seama ca nu asociasem niciodata pana atunci fructe cu carne. Asa ca m-am decis sa o gatesc, neaparat. Ce mi-a mai placut la ea e ca o poti prepara cu o zi inainte si o poti lasa la frigider ca sa o continui a doua zi cand nu mai ai altceva de facut decat s-o bagi in cuptor. Si uite asa ca ai scapat de munca pe o zi. Genial, nu?

Porc inabusit in sos de portocale

Timp de preparare in avans: 45 minute

Timp de gatit: 40 minute

Ingrediente:

  • 2 cepe medii, tocate marunt
  • 3 linguri ulei
  • 500 g filet de porc, taiat cubulete si dat prin faina
  • 300 ml suc natural de portocale (fa-l casa din portocale sau ia unul de calitate, cu pulpa, din comert)
  • 150 ml supa de pui (strecurata evident sau apa daca nu ai)
  • 225 g morcovi, razuiti
  • putina scortisoara
  • sare
  • piper proaspat macinat (sau gata macinat)
  • 2 portocale, feliate si fara pielita aceea subtire, pe cate se poate
  • 150 ml smantana
  • 2 linguri de nuci maruntite

Preparare:

  • Prajeste ceapa tocata in ulei cca 3 minute la foc mic. Adauga cubuletele de carne de porc, date prin faina si lasa-le la foc mediu, pana se rumenesc.
  • Adauga pe rand sucul de portocale si apoi supa de pui. Lasa sa fiarba totul si apoi pune morcovii, scortisoara, sarea si piperul. Acopera si lasa la foc mic pentru 30 minute.
  • Adauga portocalele, smantana si nucile, opreste focul si lasa sa se raceasca.
  • Muta totul intr-o caserola sau intr-un vas termorezistent si lasa mancarea sa se raceasca intai. Acopera cu capac si pune-o in frigider peste noapte. Daca cumva vrei sa mamanci in aceeasi zi, sari peste momentul asta.
  • A doua zi, pune caserola acoperita in cuportul pre-incalzit la 180°C, 350°F sau nr. 4 la cuptorul cu gaz.
